Sun-Dried Tomato Mayo

In a quart-sized Mason jar (for the basic mayo), add:
- 2 egg yolks
- 1 tsp. dijon mustard
- 2 pinches mineral salt
- 1 tsp. lemon juice
- 1/2 cup MCT oil
- 1/2 cup olive oil
Blend all ingredients at once with an immersion blender. When blended, add:
- 2 Tbsp. tomato paste
- 2 Tbsp. balsamic vinegar
- 1/4 cup sun-dried tomatoes, chopped
- fresh basil
