Pizza Eggs

- 1 small summer squash or zucchini, diced
- 1 whole egg
- 1/2 cup egg whites
- 1/4 cup pizza or spaghetti sauce
- 3 Tbsp. fat free feta
- 1 Tbsp. skim mozzarella
- 2 tsp. nutritional yeast
- sprinkles of garlic powder, onion powder, Italian seasoning, salt and pepper
Spray a medium pan with cooking spray and saute the squash sprinkled with the seasonings. Add a little water if needed. Once tender, crack the whole egg on top and pour the egg whites on top. Cook for one minute. Top the eggs with the sauce and nutritional yeast. Cook for another minute. Top with feta and mozzarella. Cover the pan and cook until the egg whites are cooked through.
