Blackberry PopTart Bake

- 1/4 cup rolled oats
- 2 Tbsp. psyllium husk
- 4 Tbsp THM optimized vanilla whey
- 2 Tbsp. egg whites
- 1/4 tsp. baking powder
- 1/2 tsp. THM Super Sweet
Mix together well. Remove a quarter of the mix and set aside. To the remaining batter, add:
- 1/2 banana, smashed
Mix well and spread onto parchment in a small baking pan to about 6"x6". It doesn’t have to be neat. Just spread it out evenly.Â
In another bowl, mash together:
- 1/4 cup of blackberries (or your favorite berry)
- 1/2 tsp. Super Sweet
- 1 tsp. THM Just Gelatin
Spread on top of the mixture on your pan. Then top with the remaining quarter of mixture (that doesn’t have the banana in it) for a crumble. Bake at 375° for about 10 minutes (in the oven or your air fryer).
Drizzle with a glaze of:
- 1 Tbsp. lemon juice
- 2 Tbsp. THM Gentle Sweet
