Cookie Dough Bars

Bars:
- 1 cup softened butter (2 sticks)
- 2/3 cup Swerve Brown, or Truvia Brown
- 1 tsp. vanilla extract
- 1 tsp. mineral salt
- 2 cups almond flour
- 1 1/2 cups THM Baking Blend
- 1 1/2 cups on-plan chocolate chips
Topping:
- 1 1/2 cups cups on-plan chocolate chips
- 2 Tbsp. coconut oil
In a large bowl combine butter, sweetener, vanilla and salt until fluffy. Slowly add almond flour and Baking Blend. Add the chocolate chips.
Spray 8x8" pan (or any size pan you’d like) or line with parchment, or use a candy bar size silicone mold. Spread dough evenly into the pan.
In a small glass bowl, combine 1 and 1/2 cups chocolate chips with coconut oil. Microwave in 20-second intervals just until smooth. Spread over the bars. Refrigerate for at least two hours before serving. Store in the refrigerator. They also freeze well.
