Delicata Fo-Salad

  • 2 medium delicata squash, cubed
  • 2 Tbsp. butter
  • 1/4 cup onion, diced
  • 1/3 cup dill pickle, chopped
  • 1/4 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tsp. mineral salt (or to taste)
  • 1 tsp. pepper (or to taste)
  • 2 hard-boiled eggs, diced (optional)

 

On the stove, cook the cubed delicata in the butter until done (tender). Searing on the outside will help keep the delicata from turning to mush.

 

Cool completely, then add the remaining ingredients. Feel free to make it your own by adding the things YOU like to potato salad.
