Apple Pie Ice Cream

Apples:
- 2 nice tart apples (I used cosmic crisp)
- 1/2 cup water
- 1 Tbsp. lemon juice
- 2 Tbsp. brown sweetener (like Brown Swerve or Brown Truvia)
- 1/2 tsp. cinnamon
Peel and core the apples. Slice into wedges. In a small saucepan, place the apple slices with the water and lemon juice, Cook until tender but not mushy. Then add the brown sweetener and cinnamon. Cook another minute or two and set aside to cool.
 Ice Cream:
- 2 cups nut milk
- 1/4-1/2 cup low-fat cottage cheese
- 1 Tbsp. brown sweetener
- 1 tsp. vanilla extract
- 1-2 pinches of mineral salt
- 1/4 tsp. gluccie
- 2 heaping Tbsp. TH optimized vanilla whey
Add all the ingredients to your blender and zing away. Also add half of the apples to your blender, keeping the other half aside as a mix-in. Blend and pour the ice cream mixture into two Ninja Creami containers. Freeze for at least 24 hours.
When you’re ready to eat/serve your ice cream, spin the container in your Creami machine on Lite Ice Cream. Then add a tablespoon of nut milk to the center of the container and process using the Re-Spin button. Lastly, add the remaining half of your apples to the Creami container and run it on Re-Mix.Â
You can make a batch of FP caramel sauce (https://www.joyfullifewithkj.com/dips-sauces-and-whippy-things/freecaramel) to pour over the top for extra deliciousness.
