Protein-Packed Banana Pudding

 Crust:
- Â 1 Wasa cracker
- 1/2 tsp. THM Super Sweet (only if desired; the pudding might be enough “sweet” for you)
- 1/2 tsp. vanilla extract
- a sprinkle of cinnamon
- 1 Tbsp. pecans
Zing up the ingredients in a Ninja Chopper until crumbly. Spoon into the bottom of a bowl or jar, keeping a tablespoon or so to sprinkle on the top. Without washing the Chopper, add these ingredients:Â
Pudding:
- 1 cup of 1% cottage cheese
- 1 Tbsp. optimized whey (vanilla or plain)
- 1 tsp. vanilla extract
- 1/4 tsp. cinnamon
- 1 tsp. Super Sweet
- 3/4 of a banana (save the other 1/4 for decoration)
Blend all the pudding ingredients in the Ninja Chopper. Pour over the crust in your bowl/jar. Decorate with leftover crust and banana slices.
You can cover and refrigerate for a little while to let it thicken up, but it’s definitely delish eaten right away. Squirt on some fat-free Reddi-Wip, if desired.
