Gina's Creamy Pumpkin Alfredo

The Meat:
- ½ lb. ground 96% lean chicken (or diced chicken breast)
- 2 tsp. minced garlic
- ¼ cup diced onion
- ¼ tsp. nutmeg
- ¼ tsp. mineral salt
- ½ tsp. white pepper
Cook all these ingredients together and set aside.
The Sauce:
- ½ cup cottage cheese or ricotta
- 1 cup heavy cream
- ½ cup butter
- ¼ tsp. cayenne
- ¼ tsp. white pepper
- ¼ tsp. nutmeg
- 3 tsp. minced garlic
- 1-15 oz can pumpkin puree
- ½ cup Parmesan cheese (fresh or green can)
- ¼ cup mozzarella
- ½ Tbsp. lemon juice
- 1 cup chopped fresh spinach
- garnish - your choice of roasted nuts - pecans, walnuts, hazelnuts (optional).
Add all sauce ingredients to a saucepan EXCEPT the cheese, lemon juice and spinach. Cook until it is nice and hot. Blend in the Parmesan, mozzarella and lemon juice. Add in the meat. Right before serving add in the spinach. Use it on top of the “pasta” of your choice. Garnish with the nuts.

- Dreamfields, Palmini noodles, konjac noodles, Zoodles (or other squash)
