Cheesy Scalloped Potatoes

Makes 2 servings (each: 3 gm added fat, 32 gm protein, 24 net carbs)

 

  • 2 cups cooked and sliced baby Yukon Gold potatoes
  • 1 cup low-fat cottage cheese
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/4 tsp. dry mustard
  • 1/4 tsp. paprika
  • a couple of pinches of mineral salt
  • a couple of pinches of black pepper
  • 12 slices of Canadian bacon, cubed
  • 1 1/2 cups shredded skim mozzarella cheese

In your Ninja Chopper, blend the cottage cheese and seasonings until smooth. In a bowl, mix the potatoes, cheese sauce, and Canadian bacon. Spread in a small dish and bake for 10 minutes at 375°. Top with 1/4 cup skim mozzarella and bake for five more minutes.
