Cheesy Scalloped Potatoes

Makes 2 servings (each: 3 gm added fat, 32 gm protein, 24 net carbs)
- 2 cups cooked and sliced baby Yukon Gold potatoes
- 1 cup low-fat cottage cheese
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/4 tsp. dry mustard
- 1/4 tsp. paprika
- a couple of pinches of mineral salt
- a couple of pinches of black pepper
- 12 slices of Canadian bacon, cubed
- 1 1/2 cups shredded skim mozzarella cheese
In your Ninja Chopper, blend the cottage cheese and seasonings until smooth. In a bowl, mix the potatoes, cheese sauce, and Canadian bacon. Spread in a small dish and bake for 10 minutes at 375°. Top with 1/4 cup skim mozzarella and bake for five more minutes.
