Pumpkin Ham & Gouda Souffle

In a small bowl, add:

  • 2 egg whites

Whip the egg whites until moderately stiff (to peaks) and set aside.

In a pan on the stove, caramelize in a little butter:

  • 1/4 cup diced ham (or two slices of bacon)
  • 1/4 cup chopped onion

In another small bowl, stir together:

  • 2 egg yolks
  • 2 heaping Tbsp. pumpkin (NOT pie filling)
  • 2 tsp. half and half
  • 1/4 tsp. Trader Joe’s Everything But the Leftovers seasoning OR you can just add a sprinkle of rosemary, salt, pepper, nutmeg, sage, onion powder, and/or oregano
  • 1/4 cup grated gouda cheese

Stir in the ham and onions. Then gently fold in the egg whites, keeping as fluffy as possible. Microwave for 3 1/2 minutes.

 

Single serve.
