Feta Quinoa Salad

Salad:

  • 3 cups of cooked quinoa
  • 1 can chickpeas, drained and rinsed
  • 1 English cucumber
  • 1/2 of a red onion
  • 1 diced tomato
  • 1/2 cup chopped parsley
  • 1 container of fat-free feta
  • 1/2 diced red bell pepper
  • salt and pepper to taste

Dressing:

1/3 cup lemon juice

2 Tbsp. MCT oil

2 generous pinches of THM Gentle Sweet

 

Add all the salad ingredients into bowl and give them a good mix.

Mix dressing in a separate bowl with a whisk. Pour over the quinoa salad. Can be eaten right away or put in the fridge for a few hours. Top with your favorite lean protein.
