Garlic Lime Shrimp Kebabs

Ingredients:
- 1 lb raw shrimp cleaned and deveined (whatever size you prefer)
- 3 tsp. minced garlic
- 2 Tbsp. extra virgin olive oil or avocado oil
- 1/4 cup lime juice
- 1/4 tsp. mineral salt
- 1/4 tsp. black pepper
- 1/4 tsp. paprika
- 1/4 -1/2 tsp. cayenne pepper, if desired
- 1/4 cup finely chopped parsley or cilantro (or 1 Tbsp. of dried)
- 6 large wooden skewers (soak in water for half hour prior to cooking)
Instructions:
Combine all marinade ingredients and set aside. Get your grill heating up. Put the shrimp on the skewers (5-6 per stick). Lay in a baking dish and pour marinade over. Let sit until ready to grill (at least 20 minutes).
Add the skewers to the grill and cook for about 2 minutes per side. Baste while cooking. If you do not have a grill, you can saute the shrimp in a little butter on the stovetop for 4-6 minutes. Do NOT overcook or they’ll get tough.
