Affogato
THM-Friendly: FP
Make a batch of vanilla ice cream:
- 1/2 cup low-fat cottage cheese
- 1/4 cup THM vanilla optimized whey protein
- 1 cup nut milk
- 1 tsp. vanilla extract
- 1 Tbsp. THM Super Sweet (or 2 Tbsp. Gentle Sweet)
- 1/2 tsp. gluccie, optional
- 2 cups ice
- vanilla bean (optional, but a nice touch)
Add ingredients to the blender. Blend and then pour into two Ninja Creami canisters. FREEZE FOR 24 HOURS.
After they're frozen put one of the Ninja Creami containers in the machine and process using the LITE ICE CREAM function.
Then take the lid off, make a hole in the middle, and add about 2 Tbsp. nut milk. Put the lid back on and RE-SPIN!
To start assembling the Affogato, brew a double shot of espresso. Spoon some of the vanilla ice cream in a pretty mug. Pour the espresso over the ice cream and
