Cottage Cheese Cowboy Cookies

In a large bowl, place:

  • 1 cup low-fat cottage cheese

Blend with your stick blender (or use your regular blender). Add:

  • 1/4 cup brown sweetener, lightly packed

 (or 1 tsp. blackstrap molasses to 1/4 cup THM Super Sweet)

Stir well. Place parchment paper on a cookie sheet. Scoop out 3 Tbsp. of dough at a time onto the paper. (Makes about 12 cookies.) 

Bake at 325° for about 18 minutes. When they’re cool, you can drizzle them with a little melted chocolate, if you like.
