Krystal's Cilantro Lime Cauli Rice

  • 1 - 16 oz. bag frozen cauliflower rice 
  • lime juice (fresh or bottled)
  • cilantro (picked-off stems, washed, dried, and chopped small)
  • mineral salt to taste
  • coconut oil spray

Cook your cauliflower rice in the microwave. (Mine says 6-7 minutes.) Let cool off a few minutes; then squeeze out any extra water. 

Heat a skillet on medium heat and spray with coconut oil. Pour in the cauli rice and ¼ to ½ tsp mineral salt. Stir around. Add 1 to 2 Tbsp. lime juice. Add chopped cilantro to taste. Stir around for a few minutes till all heated through.
