Jingle Balls

(Peppermint Fudge Protein Balls)

  • 1/4 cup chocolate whey
  • 2 heaping Tbsp. cocoa powder
  • 1/2 cup almond butter
  • 1/4 cup Gentle Sweet
  • 1 tsp. peppermint extract (or 4-5 drops of peppermint oil)
  • 3 Tbsp. nut milk
  • 2 Tbsp. chia seeds
  • 1 cup old-fashioned oats
  • 1/4 tsp. mineral salt
  • 1 Tbsp. coconut oil
  • 3 Tbsp. sugar-free chocolate chips (or mint chocolate chips)

Add all ingredients to a food processor. Pulse just until all ingredients are mixed together. Roll into 1" balls (about 1 Tbsp).Ā Makes approximately 20 protein balls.

~ If you use plain whey or Creamy Dreamy, add an extra heaping tablespoon of cocoa plus a doonk of stevia. Taste for desired sweetness.
