(Breakfast Cookie)

  • 1 1/2 cups COOKED oat groats (you could use steel cut oats or rolled oats if you prefer)
  • 1/2 cup rolled oats (uncooked)
  • 1 and 1/3 cups sprouted flour
  • 1/4 cup psyllium husks
  • 3 Tbsp. collagen
  • 1/2 tsp. Ceylon cinnamon (or any cinnamon)
  • 1/4 tsp. mineral salt
  • 1 tsp. baking soda
  • 1/2 cup unsweetened applesauce
  • 1 tsp. vanilla extract
  • 1/3 cup THM Gentle Sweet
  • 1/4 cup THM Super Sweet
  • 1 tsp. molasses
  • 1/3 cup egg whites
  • 1/4 cup raisins

Bake on parchment at 350° in the air fryer for 10 minutes or in the standard oven for 12 minutes.

If desired, top with a sweet cinnamon glaze:

  • 4 Tbsp. Gentle Sweet
  • 4 Tbsp. nut milk
  • 1/2 tsp. vanilla extract
  • 1/8 tsp. cinnamon

Stir well and dip cookies in the glaze.
