Cottage Cheese Cowboy Cookies

In a large bowl, place:
- 1 cup low-fat cottage cheese
Blend with your stick blender (or use your regular blender). Add:
- 1/4 cup brown sweetener, lightly packed
(or 1 tsp. blackstrap molasses to 1/4 cup THM Super Sweet)
- 1 tsp. vanilla
- 1 cup THM Baking Blend
- 2 Tbsp. coconut oil, melted
- 1/2 - 1 tsp. cinnamon
- 1/2 cup THM optimized whey protein (I used vanilla but plain is fine)
- 1 egg
- 1/4 cup nuts (I used pecans)
- 1/4 cup shredded coconut
- 1/4 cup chocolate chips (mini are nice)
- 2 Tbsp. goji berries (optional)
Stir well. Place parchment paper on a cookie sheet. Scoop out 3 Tbsp. of dough at a time onto the paper. (Makes about 12 cookies.)
Bake at 325° for about 18 minutes. When they’re cool, you can drizzle them with a little melted chocolate, if you like.
