Chocolate Covered Cherry Ice Cream

Make a batch of the FP version of Tummy Tucking Ice Cream, Trim Healthy Cookbook page 363 with the following tweaks: 

*Use 12 oz. of nut milk

Add:

  • 2 Tbsp. 1% low-fat cottage cheese
  • leave out the vanilla extract and sub cherry extract
  • 4-5 pitted cherries (fresh or frozen)
  • 1 1/2 Tbsp. unsweetened baking cocoa

Add all ingredients to the blender. Blend and then add:

  •  3-4 more cherries

Blend again lightly or just cut the cherries into small chunks and stir in. Pour into a Ninja Creami canister.

FREEZE FOR 24 HOURS (minimum!)

After it’s frozen, process in your Ninja Creami using the LITE ICE CREAM function.

Take the lid off, make a hole in the middle, and add 2 Tbsp. of nut milk. Put the lid back on and RE-SPIN!

After the RE-SPIN you could add 4-5 more cherries, then MIX-IN.
